Valentines Dessert! ( Take a peek for the perfect pack-and-go treat!)

 

Valentines Day is right around the corner, and if you’re looking for a yummy treat to share with the special people in your life – you’re in luck!

The past while. as I’ve looked around my favorite cooking blogs, I’ve noticed recipes for dessert in a jar.  Everything from brownies to cheesecake to fruit cobbler – made up as single servings in cute-as-can-be mason jars.  And so, when I hosted a recent party, I thought I’d give it a try.  I chose one of my favorite no-bake cherry cheesecake recipes, and followed the recipe as I normally do.  The only thing I did differently was instead of making it in a pie tin as I typically would, I divided it up in half-pint jars. The result?  Perfectly portioned, easy to transport, delicious little desserts.

It’s the perfect little Valentine dessert and somehow the cute little jars make everything taste better!


No Bake Cherry Cheesecake (will make between 6-8 half pint jars, depending on how full you wish them to be.)

crust:  1/2 cup butter, melted                                                                                                                  1 and 1/2 cup graham cracker crumbs                                                                         (mix together and press heaping tablespoon in bottom of 8 half pint jars.)

filling:  1 (14 oz) can sweetened condensed milk                                                                                    1 (8 oz) package cream cheese, softened at room temperature                                            1/3 cup lemon juice                                                                                                                      1 tsp vanilla extract

Cherry Pie Filling:  spoon on top to desired fullness.  Close jar with lid.


 

These turned out so well, I also tried this banana pudding in jars, and wow.  Yummy!  This got me to thinking…the possibilities are endless!  How easy would these be to pack up and take for family road trips and camping adventures?  I love that the individual portions and tight lids make them easy to store and virtually spill-free.
